Savor began on a corner of Mar Mikhael, in a room with twelve tables and a wood oven that ran too hot.
Layla Khoury opened the first room in 2014, after seven years cooking in Lyon. The idea was simple: a single menu set across the Mediterranean — Beirut, Marseille, Lisbon — cooked by people from the place, with the produce of the place, sharing one sensibility.
A decade on, we are still small. Three rooms, three kitchens, one table. We open at midday and we close when the last guest has finished their coffee. We are closed Mondays.
